+ Canapes : Seasonal vegetables with almond sauce

1. Salted cobia with cultured cream, endive, pomelo and fennel

2. Glazed pumpkin with persimmon and basil

3. Baby grouper with grilled kohlrabi, capers & brown butter

+ fruit, palate cleanser

4. Spent beer grain parfait with custard apple and wattleseed ganache

*Wine pairing to 4 dishes only, additional drinks can be purchased on the night
